Genius Hour 1.6

This week was the first week that I ran into some trouble. I made chicken fajitas this week. My issue was that I was gone this weekend, so I did not have as much time as I usually do to cook. So, I only got to cook the chicken and I did not get as much practice as I usually do. I also had to prep everything, then go to practice, and then when I was cooking the food I would run and do homework in between it cooking.

Chicken fajitas are very simple and easy to make. We thawed out chicken, and cut it into strips, during this part I did almost cut myself, because I was in a rush and not using my cutting skills that I practiced, but I made sure to be careful after that. After you cut the chicken put it in a ziplock bag with fajita seasoning, and let it marinate. Then, after I let it sit for a while, I put a pan on the stove with a little splash of oil, enough to cover the bottom of the pan, and cook it covered on medium heat. After it cooks for a little bit, you go and flip the chicken pieces and let that cook until it is golden brown.

I also sauted some onions to put with our chicken. I cut up an onion, which I started to do wrong, I went to dice it. When you make a dish like this, you want strips of onion, not diced onion. But once I got the onion cut, I put it in the pan that I had just cooked the chicken in to give it some flavor. Before I added the onions in, I put another small splash of oil, just so the onions would not stick to the pan, and it would also bring out more of that flavor on the pan. I did run into an issue when cooking the onions, I got a little full of myself and was flicking the pan of onions to mix them up and accidentally dumped half of the pan on the floor. I still had enough for my family, but my dog got a nice little snack last night.

Once I had started going, this week's food turned out pretty good, even with a couple mistakes and lack of time. But the final product of the chicken fajitas, is to put the chicken and onions in a tortilla, and my family loved that I made them dinner. I think that my family will love next week, because I am going to try and make some steaks.

  2. Ali, I am very impressed with this meal. I can see your skills progressing week by week. What are you planing to do with you steaks next week? Also what will you pair with the steaks? Keep it up, you're making me hungry.
